Vanilla Oat Milk Tapioca Pudding Recipe
Ingredients
- 1 liter (4 cups) oat milk (shake well before using; substitute any other kind of milk, dairy or non-dairy)
- 1 small vanilla bean, or 1/2 large vanilla bean (I use Tahiti vanilla)
- 100 grams (1/2 cup + 1 tablespoon) small pearl tapioca (note that different brands may require different cooking times, and some pearl tapioca needs to be pre-soaked, so check the package and adjust the process accordingly)
- 100 grams (1/2 cup) unrefined sugar (I use an unrefined blond cane sugar)
- 1/4 teaspoon salt
Oat Milk Chocolate Pudding
Ingredients
- ⅓ cup/65 grams granulated sugar
- ⅓ cup/30 grams unsweetened cocoa powder
- 2 tablespoons cornstarch
- ⅛ teaspoon fine sea salt
- 2 cups/480 milliliters nondairy milk, preferably oat
- 3 to 4ounces/85 to 115 grams bittersweet bar chocolate, finely chopped (see Tip 1)
- 1teaspoon vanilla extract
Oat Milk Latte
- Espresso OR brewed coffee– I prefer using espresso, as you can adapt it as to how many servings you will make. However, freshly brewed coffee can also be used. You will need to adjust the strength based on personal preference.
- Oat milk– Barista blend/edition of oat milk. This gives the lattes an even creamier texture, and easy crema on top (the dark froth on top). If you can’t find any barista blends, standard oat milk will be fine.
- Sweetener of choice– Optional, but only add it if you prefer a sweet latte.
